From August 15th to September 15th.

Grapes: 60 quintals/Ha - Wine: 50%.
Vinification
Pressing: full grapes are softly pressed with pneumatic presses.
Immediate separation from the skins.
Decanting: static cold to clean the must.
Alcoholic fermentation: at controlled temperature (max. 15°C) for an average of 15 days in stainless steel containers.
Use of selected variety and aromatic yeasts.
Blending: with 40% of the same type of cold macerated product.
Maturing
In stainless steel containers up to bottling.
Bottling
From February-March following the picking period.
Refining
About 3 months in bottles.
Average production per year
Approximately 5.000 bottles.
Organoleptic features
Colour: bright straw yellow colour.
Scent: intense and fresh with notes of pear and apple, long with a light almond final.
Taste: dry, harmonious, complete, persistent with a firm mineral vein.
Producer's recommendation
Coupling: ideal with appetizers and different fish dishes, salads, vegetables and fresh cheeses.
Service notes: to be served at 10/12°C.
