From 1st to 15th September.

Grapes: 60 quintals/Ha - Wine: 50%
Vinification
Pressing: full grapes are softly pressed with pneumatic presses.
Immediate separation from the skins.
Decanting: static cold to clean the must.
Alcoholic fermentation: mainly at controlled temperature (max.15°C) for an average of 15 days
in stainless steel containers.
10/20% of the chardonnay does the fermentation in oak barrels at controlled temperature (max 15°C).
Use of selected variety and aromatic yeasts.
Blending: with 15% of the same type of cold macerated product.
Maturing
In stainless steel containers up to bottling.
Bottling
From February-March following the picking period.
Refining
About 12 months in bottles.
Aaverage production per year
Approximately 12.000 bottles.
Organoleptic features
Colour: a quite strong straw yellow colour.
Scent: rich and full with fine complex white fruit notes and a flowery smell and acacia honey.
Taste: dry, mellow and classy.
Complex and fine.
Producer's Recommendations
Coupling: best with vegetable rustic cakes, first courses with seafood, noble fish and white meat.
Service notes: to be served at 12/14°C in a premium white wine glass.
